Episode 285 – Smokin Stuff

Standard

Hey kids, It’s Jeremy here blogging about this weeks exciting interview. (Is that a thing anymore? Blogging?) Well at any rate, we kick off the show with a Covid update from Chris and Bre. Chris is clean now and Bre will be taking her follow up Covid test in a day or two. With luck we will be back in the studio next week!

For anyone following our ‘Farm Talk’ we discuss potatoes and root vegetables, it’s time harvest them or cover them with straw, grass clippings, or leaves.

After those riveting conversations we get to the hart of the matter, or the ‘Meet’ of the matter if you will. This week we interview Anthony Lujan from Smoke Ain’t no Joke BBQ Team  @smoke_aint_no_joke_bbq

Born and raised in Utha, Anthony began his long journey into the world of BBQ when his uncle showed him at the tender age of 8 how to properly BBQ a burger. From that point on he loved helping with the grilling and all things BBQ. Anthony took a class on BBQing and when asked what he wanted to get out of the class he told the instructor ‘To beat YOU at a BBQ competition’. His instructor laughed, but little did he know just a few short years later Anthony would be taking home multiple trophy’s and he did indeed beat his instructor. Truly the student had become the master.

We discussed the differences between the major BBQ groups including, but not limited to: Texas BBQ, with its salt, pepper, and garlic. Carolina BBQ, vinegar based. Kansas City BBQ, all spice and heat. The newly formed California BBQ, which introduced tri-tip into the world of BBQ competition.  And Anthony’s Utah style BBQ which is a combination of Heat and Sweet. Anthony says ‘Utahans love their sugary drinks. By combining the heat with a sugary based soda, sprite, coke etc. he has been able to dial into what the Utah judges are looking for.

Anthony began touring the BBQ circuit and, in the process, he was introduced to a local pit master by the name of Rusty Monson. Rusty is the owner of Salt City Barbeque, and according to Anthony (and many others) Rusty is a master of his craft

Anthony and Rusty hit it off, and after one conversation about Podcasting they were both in and created the Pitmaster’s Podcast.

The podcast has given them both opportunities to meet some of the worlds best BBQ pitmasters and talk ‘Turkey, and Beef, and Pork’ with them. Some of their favorite interviews have been with Tuffy Stone ( legendary in the bbq world for his precision and obsession with the science of smoke) and Malcom Reed who’s fame went from his little kitchen table to over a million followers almost over night.

This was a fun interview and a good discussion about all things BBQ. Give it a listen and tell us what you think.

Episode 278 – Cooking with Carmie

Standard

It’s Bre again!  We started this episode talking about cold barbeques, harvesting and FanX.  Jeremy decided to throw a last HURRAH barbeque before Fall and the wedding.  While he may be beat the wedding date deadline, Fall beat him.  The day started off okay, but it was sweater and fire pit weather by the end.  Because of this cold weather, it’s time to harvest or you’d better be covering your crop.  The temperatures are already dipping below freezing!  Lastly, FanX was underwhelming.  I’m not sad we went but unlike most years, we didn’t stay for full days and took breaks where we came all the way back home.  We ended up not even going on Saturday because running errands sounded like more fun.  I think FanX needs to start rethinking their panels and their presenters.  It was fun to see the artists and authors and we came home with a haul!

Carmella Anderson from Carmella’s Cuisine is our guest interview, and we were so extra-excited because she showed up with yummy cheese, crackers, and fruit for us all to dine on.  You all know how much I love to eat on the show, but Chris wouldn’t let me, so we enjoyed an after-interview with Carmie, and her husband while chowing down on the good eats.

carmellascuisine.com

Carmie was born in Toledo, Ohio.  She comes by cooking naturally as her parents managed food services in country clubs.  After that her family lived above a tavern in Chicago that they owned and operated.  As part of an exchange program, Carmie studied in France and has gone back since to study cooking.  She has taken cooking classes all over Europe but has never officially gone to school for cooking.  While it sounds like Carmie might have had a professional catering business most of her life she wasn’t able to start her own business until quite a bit later.

Carmie and her husband moved to Utah to help take care of her husband’s grandfather but it’s not professional catering time yet.  She and her husband hand a handicapped child that kept them busy and it wasn’t until that child moved into a group home that Carmie took official steps to start her own business.  Until then, she had been catering for friends and family at cost and already knew she loved it.

Chef Carmie has a passion for cooking and a dream and ran with it.  Some of her first official business was a Delta Airlines contract that she took over from someone else.  Doing that forced her to get her license and find a commercial kitchen.  When the owner of her commissary decided to sell the building, Carmie started looking for a new kitchen and finally found a home in Riverton.  It was leased to her as a working kitchen, but the prior tenant had been forced out and left behind not only a mess, but a kitchen that didn’t meet the city regulations.  So, while still working in her first commissary, they started preparing the new kitchen for business.  Her landlord forgave rent for few months while they renovated since the upgrades made the building more valuable!

So, why catering instead of truck or restaurant?  Carmie tells us she loves to be a creative cook and the idea of doing the same menu over and over was not appealing.  She loves to create beautiful means that are also tasty.

In addition to the catering, you can order meals to eat at home from her website.  Orders are placed by Sunday evening and picked up on Tuesday. She can customize meals for gluten free, dairy free, and just about everything under the sun.  She doesn’t see her work as just a job.

Carmie tells us about how she survived COVID shut down, what kinds of meals she prepares and the strange requests some folks make.  She tells us about her favorite foods to make and eat and how loving her work helps her through the tough times.

Chef Carmie tells us that having grown up in Chicago and having travelled a lot, she loves Utah because you can find anything.  There is a variety of entertainment and landscape.  She finds Utah to be well-rounded and wouldn’t dream of calling anywhere else home.  You can find her on

Most interesting/unique thing:  Having grown up in Chicago and travelled quite a bit.  You can find anything in Utah, entertainment, landscape, well-rounded place.  Once you’ve been here and seen Utah, it has everything.

You can find Carmella on Instagram @carmellascuisine, on Facebook under Carmella’s Cuisine and online at www.carmellascuisuse.com. Go enjoy this episode and some of her great cooking!

Episode 271 – City Planners

Standard

Howdy neighbors, this Jeremy coming at you with another exciting episode recap. This week we are joined by Ryan Barton. Ryan was born and raised here in the great state of Utah. Ryan is a friend of mine and a colleague at York Engineering.

We chat with Ryan about why he chose engineering….and how engineering chose him. Ryan talks about his education (master’s in civil engineering) and how that lead to his thesis work with accelerated bridge construction. We talk at length about city planning, poor airport construction and the Real Salt Soccer Team.  One of the most interesting stories Ryan told us was about his ‘Bubble Soccer’ or Concussion Ball incident. After flying out of the bubble suite and cracking his skull he literally lost 2-3 hours of his life…he knows it happened but can’t remember a thing.

This fun filled game of soccer landed Ryan a trip to the hospital and a craniotomy! I’m guessing Ryan hung up his bubble ball after that experience.

We also talk about the recent monsoon rains here in Utah. The total lack of rain in the past few months has led up to flash flooding, train derailment, and mud slides. I recap my weekend adventure at the Great Salt Lake. Chris and I both element over our sad gardens, and on a surprising note Bre’s mom is getting married!

Episode 268 – Iron Pine

Standard

Hey, it’s Bre! It’s my turn again for the blog.  This is good one, so be sure to listen if you haven’t already!

Chris and Jeremy lament the gardening scene and how it’s been a bad year due to the early heat and continued high temperatures.  Neither one is having a great gardening season.  To add insult to injury, Jeremy’s rats are back.  He and Julia’s boyfriend, Bryton, have another shooting session scheduled.  They will be using night vision and a .22 air rifle to take the little suckers out.

The Filly Apron

I got to meet my new bio-family and they were incredibly welcoming and kind.  I always thought that the work my parents went to in order to conceive me made me kinda special; but, knowing the thought my donor and his family put into as well, really makes me feel worth.  It’s a little overwhelming but in a good way!

This week we are lucky to speak to an artist.  Austin Luckett from Iron Pine joins us in the studio.  We made contact with Austin through Bryton.  Austin chooses to print his art onto metal as opposed to more traditional mediums.  He likes to help other artists and uses his equipment to print their work, too.

Austin started out life in Boynton Beach, FL and moved all over the country.  His father was a hydrogeologist (how cool!) and they moved where the work was.  He met his wife while they were living in California.  Austin started out his career as a landscape architect and they worked at a firm together.  At one point, he thought he’d pivot to architecture but after going to school for a while, just wasn’t feeling a passion for it.

He decided he needed a change.  His wife is originally from Ogden, so they decided to head back to Utah.  Austin had been developing a landscape photography hobby and that was evolving into more.  With his wife working at Hill Air Force Base, he worked with his children who were in a learning program hat took them all over Utah, where Austin was able to photograph Utah’s beauty.

When he had the opportunity to purchase metal printing equipment from someone who had been making his prints for him, he jumped.  He started renting a space at The Monarch on Ogden’s Historic 25th Street.  The building was developed with artists in mind.  There are 40 art studios, retail space, a restaurant and they have markets on Saturday’s and Sunday’s.

Austin says the most interesting/unique thing about Utah is Ogden’s Historic 25th Street.  There is something for everyone, from a biker to a businessman.  He loves the people, there’s some grit and always something interesting happening.

Mytrex

This week we interviewed Michael Bangerter who is the Response Center Director at Mytrex, Inc, also known as Rescue Alert.  The company started in the 80’s when his father, Richard Bangerter, engineered an emergency phone number dialing machine for a college project.  The invention took off and turned into the technology used today: Personal Emergency Response Systems (PERS).  Someone with a PERS simply has to press a button they wear around their neck or wrist during a medical emergency and an Emergency Medical Dispatcher will come over a speaker to give medical instructions while contacting the subscriber’s local authorities to send assistance.  Mytrex has manufactured and distributed over 1 million units to various companies worldwide.

Michael tells about his personal accounts growing up in the business and watching his father take life-saving calls as an 8 year-old boy.  He grew up to become in charge of all the dispatchers for the company’s two locations, South Jordan and St. George.  Michael and Julia finish off the episode by sharing some scary, funny, and heartfelt accounts of dispatch calls they have taken.
