Episode 160 we had an opportunity to sit down with Jackie Assaad of Beehive Cheese! She might be new to the cheese business but she is educated and loves cheese! That’s all one really needs, right?

Located in Uintah, Utah just at the foot of Ogden Canyon, Beehive Cheese is one of the longest tenured cheese companies in Utah! Jackie joins us from Florida via Colorado. From working on yachts to moving to Utah for the best skiing on earth, she now calls Utah home. Jackie took us back to the beginning of Beehive Cheese. It all started with two men, Ford & Welsh, 14 years ago when they begged Utah State to let them into their advance cheese making course! This is where the creation of Promontory, the base for their cheeses, starts! It was a cheese originally made for Utah State. Then came the awards… or maybe then came Buzzed, a lavender coffee rubbed cheese, which started their rubbed rind movement and then came the awards… We can’t remember. But it doesn’t matter cause 14 years ago it started and they are still producing some of Utah’s most delicious and versatile cheeses! A newer cheese of mention is their hatch chili rubbed, which 3% of sales goes to Red Butte Garden. *we love a good cause*

We did have to go to a very dark cheese place… is cheese wiz and easy cheese even cheese?

Beehive Cheese now has 8 different cheeses as well as their curd line. You can find them at local grocers, the Salt Lake Farmer’s Market, the Ogden Farmer’s market and locations out of state! They are frequently teaming up with local producers such as chocolatiers and craft beer makers for pairing classes. They have also paired with Harmon’s Grocery for classes throughout the year.
