Since we started our show in 2016, we have been asking our guests at the end of every New Utah interview, “What is the one thing that you would tell someone visiting Utah they had to do before leaving?”

We had Shawn Peterson, formerly of Green Urban Lunch box, join us for episode 109 and then he stopped back by to say goodbye for episode 182. We did ask him his one thing on his last visit too. This visit he told us, since he will probably be leaving Utah, that the one thing he will miss about Utah is the Wasatch mountains on a clear day with a little snow on top.

Episode 182 Growing Separate Ways

Episode 109 we had the pleasure of speaking with Shawn Peterson, the founder and director of Green Urban Lunch Box. It is a local project that works to help seniors with their gardens, harvest crops from gardens/orchards that can’t do their owns, and provide spaces in SLC for community gardening. Shawn wanted to sit down with us again to talk about what has been going on the last couple years and where the organization is headed.

Shawn and the board for Green Urban Lunch Box have been actively interviewing candidates to take over for Shawn as the executive director. When he started GULB his plan was 5 years and he is now 9 years into the project. GULB projects include; gardens in low income areas, assisting seniors with gardens they want to have at their homes and deliveries to senior centers. They have gardens to assist in teaching the next generation of farmers. They deliver to the cancer center, and they assist people in picking their fruit trees! An end in mind is to make sure there is as little as possible farm food waste in our community.

What is up next for Shawn? Shawn received funding in the last month to start a national gleaning project! You heard it here! Shawn is going to help educate gleaning organizations in how much farm food waste there actually is and how to reduce that. Did you know that 20% of produce never leaves the farm? Did you know that 80% of cucumbers are never used? Shawn’s goal is to make sure that farmers and communities are utilizing the farm food that is being grown.

We are super excited to see what will become of Green Urban Lunch Box and to see the growth of Shawn’s new venture. Oh! And on a side note, GULB and Mountain West Cider will release their annual collaboration cider on November 23rd!

Episode 109 Urban Farm Wars

What do you do after you’ve Wikipedia’d and You-Tubed how to sail, buy a boat, travel the Pacific ocean, and come back home? Well, you start a non-profit of course!

This week we were honored to have the founder of Green Urban Lunch Box, Shawn Peterson, join us. No, he is not related to Farmer Luke Petersen. Shawn sat down with us to talk about the journey that lead up to the creation of GULB. Once we got there, he told us about the amazing programs that are being offered through the Green Urban Lunch Box. Apprenticeships, senior gardening programs, garden and fruit share’s, and the local businesses that they have partnered with to make sure that a “community growing for community” is happening here in the Wasatch Front!

Some of their partnerships include Waterpocket Distillery, Mountain West Cider, the Pago group, and The Rose Establishment. We guarantee that this list will continue to grow! Each fall you can taste a cider that MWC makes from apples from all around the valley! It is truly unique to Utah!

You may also know the Green Urban Lunch Box for the school bus greenhouse that they drive around Salt Lake City on occasion. Shawn gave us the story behind finding that bus and how it has evolved over the past few years. He also shared with us how they help seniors farm their own land.  Green Urban Lunchbox also has property that they are cultivating in South Salt Lake.

Shawn has an amazing heart, a problem solving mind, he wants to give the community real food that helps them connect, and most importantly he wants to make sure that he gives seniors street cred.

Episode 63 Hard Cider in Utah

The New Utah Podcast was honored to be invited to record at Mountain West Cidery this week! It seems like it was just yesterday that Jen, co-owner, joined us for episode 18! This time we got Jeff, also an owner, and Jess their marketing guru!

First things first. Did you know that in Utah cider is classified as a wine? Yea, we didn’t either and it’s kind of dumb. The only way to change these silly laws is to get in with the legislative sessions like Jeff has been doing! If you are interested in helping, just reach out to them. Mountain West Cider is heavily involved in the community, which we love, and are currently wrapping up their second year of Gay Ruby for Utah Pride celebration. After we spoke to Jen last year they introduced Desolation to their line up, proceeds from bottle sells support the Southern Utah Wilderness Alliance. This bottling brings them to four; 7 Mile, Ruby, Desolation, and Cottonwood. They are working on a second release of Stillwater, which is their hard cider aged in High Whiskey barrels for 6 months! Yum! They are getting ready for their second annual 4th West Oktoberfest at the end of September, doing quarterly gallery strolls with local artists, an upcoming partnership with Subaru, and a third Thursday of the month exercise and cider night! They also book events at their space if you are interested.
